Totally Unauthentic Pad Thai

The first time I had Pad Thai was in high school or maybe even college. Apparently it wasn’t that memorable. There is a really nice (downright opulent for college students) restaurant in downtown Ashland, OR called Thai Pepper. We liked to go there for special occasions, like when parents were paying. The other place I remember eating Pad Thai was in Anchorage. In the sketchy Spenard area of town. They had a fairly large menu, but I was not terribly adventurous. Pad Thai with chicken. I’m not sure how all the flavors come together to make something I really enjoy. Chicken and eggs? Sugar, cayenne, peanuts, cilantro and lime? Why does it taste so good?  My recipe is adapted from Dad’s Pad Thai on Allrecipes.com.  Looking at that recipe makes me realize just how far I stray when I start cooking.
